Zucchini and Tuna Patties
These patties are packed full of hidden vegies. They are perfect for a family meal with leftovers used for the lunchbox.
1 tbsp Olive Oil
1-2 Potatoes, cooked and mashed
425 g can Tuna, drained, flaked
1 Zucchini, grated
1 Carrot, grated
1/2 cup Low Fat Grated Tasty Cheese
2 tbsp Parsley, chopped
1 tbsp Lemon Juice
1 cup Dry Breadcrumbs (or 1 minute or blitzed oats)
In a large bowl, combine potato, tuna, zucchini, carrot, cheese, parsley and juice. Mix well and season to taste.
Form mixture into 10 patties. Coat in breadcrumbs (or oats) and arrange on a baking paper-lined oven tray. Chill for 20 minutes.
Heat oil in large frying pan over medium heat (or cook on BBQ). Cook patties in two batches for 3–5 minutes each side, until golden. Drain on paper towel and serve.
