Zucchini Chocolate Cake

The kids will never know this lovely cake is filled with Zucchini! You can easily leave out the nuts or replace them with dates.

Ingredients

90 grams butter
1 tsp grated orange rind
1/2 cup castor sugar
2 eggs
1 1/4 cups SR flour
1/4 cocoa
1/2 tsp cinnamon
1/4 cup milk
1 cup grated zucchini
1/2 cup chopped pecan nuts or dates (optional)

Method

Cream butter, sugar and rind until light and fluffy
Add eggs one at a time beating well after each addition
Stir in sifted dry ingredients, milk, zucchini and nuts
Spread into loaf pan lined with baking paper
Bake 45 mins – stand for 3 minutes before turning onto wire rack to cool
