Tangy Melon Salad

A twist on a usual garden salad, this melon salad is the perfect summer salad to serve with a BBQ or on it’s own as a dessert.
Ingredients (serves 4-6)
1/2 medium watermelon
1/4 honeydew melon
2 tablespoons fresh mint leaves
Using a melon baller or teaspoon, scoop out balls of watermelon, rockmelon and honeydew into a large bowl. Remove any seeds as you go.
Chop the mint finely. Add it to the bowl.
Squeeze the juice from the lemon and pour it into the bowl with other ingredients.
Toss the melon lightly allowing all ingredients to mix.
Refrigerate for one hour (optional)
