Sweet Chickpea Muffins

You would never guess these muffins have chickpeas in them! Simple to make and delicious. These are raspberry and banana but you could do as coconut and sultana or flavour to your liking.


1 can of chickpeas (drained well)
3 eggs
3/4 cup self raising flour
1 teaspoon baking soda
1 teaspoon vanilla
3 tablespoons honey
1 banana
100g berries (frozen are OK)


1. Preheat oven to 180 degrees and grease muffin tins
2. Place all ingredients in a blender and blend until smooth
3. Add banana and berries and gently fold into mixture
4. Spoon mixture into muffin tins and bake for 20-25 minutes, or until muffins spring back when touched.
