Simple Banana Muffins

This banana muffin uses outs rather than flour as the base and is a delicious addition to lunchboxes

OCCASIONAL IN SCHOOL CANTEEN

Makes 12 muffins

Ingredients

2 cups oats (you could replace with self raising flour and omit baking soda if required)
3 bananas (the riper the better!)
2 eggs
1/2 cup of dates
1 teaspoon baking soda
1 teaspoon vanilla essence
Feel free to add a handful of chopped walnuts if you would like

Method

Preheat oven to 160 degrees Celsius and grease a 12 hole muffin tray
Place all ingredients in a blender and process until smooth
Pour batter into the muffin tray and cook for 15-18 minutes or until brown and springy to touch.
Can be stored in the fridge or freezer.
