Sandwich Sushi

Sometimes a little creativity is all you need to ensure the lunchbox comes home empty. Here’s a twist to the basic sandwich. Try these for the lunchbox today and you won’t hear any complaints

Ingredients

8 slices wholemeal bread, crusts removed

Choose a selection of fillings such as:
310g can creamed corn
4 slices lean ham
1 small carrot, peeled, grated
1 small Lebanese cucumber, peeled, cut into long strips
200g can tuna, drained
2 tablespoons light whole-egg mayonnaise
Lettuce leaves, washed, dried, finely shredded
Low fat cheese, grated
1 small avocado

Method

Place bread onto a flat surface. Use a rolling pin to flatten bread slightly.
Spread selected fillings over bread, leaving a 2cm strip free of filling along 1 edge. Try these combinations: ham, carrot & cucumber; tuna mixed with mayo, avocado, & lettuce
Roll up to enclose filling. Cut each sandwich into 3 rounds.
Wrap in plastic wrap. Store in the fridge until ready to pack into lunch boxes.
