Rainbow Kebabs

Canteen = Everyday

These bright and colourful Rainbow Kebabs are quick to make and are perfect for the lunchbox. The cooked vegies can also be added to sandwiches, wraps or pasta to make other lunchbox items.

Ingredients

Cherry or grape tomatoes
Red capsicum cut into small squares
Yellow capsicum cut into small squares
Yellow squash, halved and cut into thick slices
Zucchini, halved and cut into thick slices
Green capsicum, cut into small squares
Red onion, peeled and quartered then cut into bite-sized pieces
Mushrooms
(any vegetables can be substituted)

Olive oil to coat, salt and pepper (or seasoning of your choice)

Method

Slice vegetables to required sizes. Try to keep them similar so they cook evenly.
Soak wooden skewers in water.
Thread vegetables on to skewers. Cook either in an oven (approx. 30 mins at 180 degrees), a pan, or grill on oiled bbq for approx. 10 mins or until cooked through.
Remove and serve or have cold for the lunchbox.
