Pumpkin Balls

Simple, veg-packed snack that can be modified to suit root vegetables and legumes that you have in your house.


1 cup baked pumpkin
3/4 cup cooked brown rice
1/4 cup reduced fat cheese (grated)
1/4 red lentils (or any other type of legume cooked & mashed)
1 cup bread crumbs


Preheat oven to 180 degrees and line a tray with baking paper
Mash pumpkin in a bowl and add rice, lentils and cheese. Mix until combined.
Roll mixture into bite size balls and coat in bread crumbs. Place balls on tray.
Bake for 20 minutes, turning after 10 minutes (not essential, but browns more evenly)
