Pea Pesto Pasta
Great for a family meal or for the lunchbox, the kids love a green theme! Call it Hulk Pasta… what kid doesn’t want to be like the Hulk!
500g spaghetti or other pasta (Shells work well)
500g packet frozen peas
1 garlic clove, chopped
1 cup chopped fresh basil leaves
1 cup baby spinach
1/3 cup grated parmesan
2 tablespoons olive oil
Cook pasta in a large saucepan of boiling salted water, following packet directions until tender. Drain, reserving 1/3 cup of cooking liquid. Return pasta to saucepan.
Cook peas, following packet directions, until just tender. Drain.
Place 2 cups of the peas in a food processor or blender. Add garlic, basil, parmesan and oil. Process until almost smooth.
Add pesto, spinach, remaining peas and reserved cooking liquid to pasta. Season with pepper. Toss to combine.
