One Pot Chilli

A winter warmer at its best!

Serves 4-5


500g mince beef
1/2 an onion (diced)
1 zucchini (grated or diced)
4 carrots (grated or diced)
5 cloves of garlic (crushed)
2 teaspoons chilli paste
1/2 tablespoons of chilli powder
1 tablespoons each of oregano, cumin and paprika
1 can of diced tomatoes
1 can of kidney or black beans (drained)
1 cup beef stock
Toppings of your choice: avocado, cheese, greek yoghurt and pita or corn chips are all great!


Saute garlic, chilli, onion, carrots and vegetables over medium heat until soft. Remove from pot.
Place mince and spices in pot and cook until brown.
Add vegetable mix and all the other ingredients and simmer for at least 30 minutes (longer at a lower heat will bring out even more flavour).
Serve topped with toppings of your choice
