Okonomiyaki (Japanese Pancakes)

This Japanese recipe is perfect for using up leftover vegetable in the fridge and exposing your kids to some different flavours.

Ingredients (makes 15 pancakes)

1 cup of flour
3/4 cup water
1 egg
1/4 cabbage (shredded)
2 small carrots (grated)
1 medium zucchini (grated)
2 green onions (finely sliced)
Japanese Mayonnaise, Wasabi or pickled ginger to serve


Place all ingredients in a large bowl and mix until well combined.
Heat some oil in a pan and pour small portions of the mixture in to form pancakes / pikelets.
Cook on medium heat until bubbling (2-5 minutes) then flip.
Top with mayonnaise, wasabi or ginger and serve.
