Lunchbox Snack Bars

These tasty bars are a great breakfast or lunchbox option. They are packed full of goodness that will keep you going for hours. Mix up the ingredients to your liking. We added some mixed dried fruit and pumpkin seeds too.


1 1/2 cups rolled oats
1 cup mixed nuts (or combination of nuts and dried fruit like sultanas)
2/3 cup wholemeal flour
1/2 tsp ground cinnamon
Pinch sea salt
3 tbs coconut oil
1/2 cup maple syrup
1 egg
1 tsp vanilla extract


Preheat oven to 175°C and line a 20 x 30cm baking dish with baking paper.
Place all ingredients in a high-speed food processor and pulse to break down nuts and oats.
Spread mixture into tin and press down firmly.
Bake in oven for 10-15 minutes or until golden brown on top.
Allow to cool completely on a wire rack.
Cut into bars.
Will store in an airtight container for up to 4 days, refrigerate for up to 14 days or freeze for up to 4 months.

Note: you can experiment by reducing the nuts and adding some peanut butter if you are after a moister texture.
