Lunchbox Scrolls

Canteen = Everyday

Lunchbox scrolls are always popular but these homemade ones are delicious and can be tailored to your families favourite flavours (or what is leftover in the fridge!)

Serves: 6 scrolls

Ingredients

1 cup self raising flour (plus a little for rolling)
1/2 cup of natural or Greek yoghurt
1/3 cup pasta sauce or tomato paste (or pesto)
3/4 cup grated cheese
2 cups of your favourite pizza toppings

Method

Preheat oven to 180 degrees and line a baking tray
Mix flour and yoghurt in a large bowl and knead until it forms a dough-like consistency
Roll into a large rectangle, using additional flour to ensure it does not stick
Spread pasta sauce, toppings and cheese evenly across the dough
Roll the dough into a log shape and cut 6 even slices
Place slices on tray and bake for 20-25 minutes (or until golden)

Grated vegetables can be added to the dough without ruining the fluffy texture
