Lasagne Cups

Canteen = Everyday

These are super easy to make and a great way to use up leftover Mexican!

Serves: 12 cups


1/2 packet of dumpling wrappers (usually available in the cold section of grocery stores)
2 cups of filling (we used Savoury Mince mix (see Jaffle recipe) but you could use any filling you like)
200g grated low fat cheese


Preheat oven to 180 degrees Celsius
Lightly grease 12-hole muffin tray
Place 1 dumpling wrapper into each muffin hole. Fill with a spoonful of savoury mince mixture and top with grated cheese
Bake for 12-15 minutes or until cheese has melted and wrapper is crisp
Cups freeze well and can be defrosted in the microwave and heated in a pie oven
