Korean Beef Bowls
These bowls are hearty, yet light and delicious! The perfect addition to the weekly meal plan.
600g beef brisket
6 cloves garlic
1 inch piece of ginger
1 pear (core removed)
1/4 cup of soy sauce
2 tablespoons sesame or olive oil
1 chilli (diced)
1 cup beef stock
1/2 cup mayonnaise
1 teaspoon pasta sauce
1 teaspoon allspice
1/2 teaspoon wasabi sauce (or chilli)
Use a tablespoon or water to this as required
Add kale or Asian greens, rice, asparagus, sesame seeds, spring onion, edamame and a poached egg to your bowl as desired
Place marinade ingredients in a blender and pulse until smooth. Coat the meat and let marinade for at least 30 minutes
Place meat and marinade in a slow cooker and cook until tender. Time will depend on slow cooker setting (usually between 4-8 hours).
For sauce: mix all ingredients together
Assemble greens, beef, rice, asparagus, edamame, sesame seeds and egg in a bowl and top with sauce to serve.
