Fruity Chocolate Bites
These tasty snack bites will be a winner for kids and adults alike!
2 cup rolled oats
1/2 cup olive oil
3 tbs cocoa powder
1/2 cup shredded coconut
1/4 cup apricots (finely diced)
1/4 cup sultanas
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
2 large bananas (ripe, mashed)
1 tbs honey
2 eggs (large, beaten well)
Preheat oven to 180°C. Lightly grease a slice tin.
Add all ingredients to a large bowl and mix until well combined.
Press mixture into tin and bake for 20-25 minutes, or until brown on top.
Let bars cool in tin and then slice into squares.
These bars store well in an airtight container for 3-5 days. For longer storage, store in the freezer.
