Beetroot Fritters

These bright and colourful fritters are fantastic for a holiday picnic or for the lunchbox. Packed with vegies they are delicious on their own or placed on a wholemeal roll with some salad for a scrumptious meal. Quick, easy, healthy and cheap… they tick all the boxes!

Serves: 8-10 fritters

Ingredients

1 cup peeled, grated beetroot
1 cup grated zucchini
1 cup grated sweet potatoe
1/4 cup finely chopped onion
1/2 cup plain flour
2 eggs, beaten
salt
pepper
Vegetable oil

Method

Mix all ingredients (except oil) into a mixing bowl.
Head a frying pan or BBQ and add oil.
Add heaped tablespoons of mixture and cook on one side before turning over to cook on other side.
Remove from pan and place on paper towel.
