Bear Muffins

A cute play on the trusty muffin. The kids are going to want to help you make this lunchbox treat!

Ingredients

1/2 cup self raising flour
1/2 cup whole grain flour
1/4 cup cocoa
1/4 cup sugar
1 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons oil
1/2 cup milk
1 mashed bananas
1 teaspoons vanilla extract
Decorations: 24 dried apricot pieces (12 of which are cut in half), 24 sultanas, 12 blueberries

Method

Preheat fan forced oven to 180 degrees Celsius and grease a 12 cup muffin tin.
Place all muffin ingredients into a large bowl and stir until well combined.
Fill each muffin cup and bake for 18-20 minutes. You can tell that they are cooked by inserting a skewer into the centre of a muffin. If it comes out clean, the muffins are ready.
Let muffins cool then decorate with apricot, sultanas and blueberries.
